Vines managed under an organic system - making the healthiest wines we can. Our vines are carefully managed under an organic system. Although not certified this ensures we, and our patrons are enjoying the healthiest wines we can make.

Our wines are hand picked, hand made, minimal intervention, with our reds unfined and unfiltered.  No other winery in the world, that I am aware of, has its customers determine the price of wine that they are buying. Our 'Cardinals' set the prices and keep the winemaker honest and ego free while keeping our patrons loyal and engaged as reflected in our philosophical label “Aequitas"

Red

Tripartite 2020

French - of three parts
Grenache / Shiraz / Mourvedre

Intensely deep ruby. Fresh blueberry and peppermint whiff comes up straight away. Another swirl brings up warm spices such as cardamon pot and star anise. Some super charged dark plum and mulberry fruits are obvious present in the glass. Lavender like floral perfume adding subtle prettiness to the drop.

The plate is plush and juicy. Basket full of dark ripe fruits burst in your mouth, creating succulent sappy feel enriched with fine tannins and spices. All the three varieties are shining but all in accord. Grenache provides pretty perfume and freshness and density of ripe raspberry; Shiraz provides layers of spice and Mourvèdre adds the savoury gamey umami hits. The treatment in oak joins all together, combining the fruits quality and skill of the winemaker. Just like a pleasing orchestral tune they are all in symphony - the conductor, Michael Edwards.

Cabernet Sauvignon

Bright ruby clear appearance.

Calm and peaceful but consistent aroma flaws in the glass. There is some spiced blueberry, dark plum, prune, fig and a portion of sun-dried character like sultana on the nose. Little hint of aromatic garnish, garden mint, smoked paprika and fresh chilli pepper, tickle the air. Underneath earthy paperbark and gentle cedar scent walk through ever so slightly.

The palate is very confident but some what more elegant and focused. There is some dried raspberry dust like boosted fruit acidity and prune nectar or date molasses like concentrated developed sweetness. Textbook Cabernet palate, cigar box dried mint, existing gracefully in balance. Gentle waves of chard spices, tighten up the drop along with little slate like, inky touches. The tannins are there but rather lacy and fine.

It is drinking well now. Tastes already quite developed considering it’s only three years of bottle age. It can age more for next few years but I would drink sooner than later.

Deep garnet, slight dark amber twinkles around the rim.
Powerful aroma overflowing from the glass. Seductive perfume of cassis, vanilla and coco are forefront. Delicate coconut, cigar smoke and charcuterie, stimulate the appetite.
The texture of the wine is so complete. Soft blanket of tannin embraces the entire mouth, bold statements of varietal character lingers forever on the palate - energetic expression of cassis, prune, mulberry in harmony with vanilla pot, wattle seed, milk chocolate, just a trace of bell pepper and hint of consommé giving some depth to the wine. Every single sip is just joyful and pleasurable.
Singing out the purity of fruits which cannot be faulted.

Cease and Desist 2018

Individually numbered bottles.

Deep ruby with red brick rim. The aroma is ridiculously rich powerful. Sweet nose of black current, fig and plum. Layers of elegant floral nose. Violet, lavender and hibiscus. Savoury tertiary nose-sandalwood, vanilla, tobacco leaf. All in harmony profoundly. From the first sip, it is very satisfying. Extremely ripe strawberry splashes on the palate, followed by a sequence of flavours echoing the aroma. Juicy dark fruits, dark cherry, mulberry, cassis then to the dusty spices, cinnamon, nutmeg, cloves, goji, cigar dust and sumac, decorated by gorgeous floral notes. The tannins present yet soft and velvety. The great thing about this drop, this sensation stays on the palate for a long time. Such an opulent mouthfeel.  We only pick these grapes from the best of the best parts of our carefully managed vineyard. It is our joy to see that the grapes turn out outstanding drops. Highly recommend decanting or open the bottle at least one hour before the consumption.  Extremely limited.

Smoky ruby with slight hue of terracotta.
The nose still so fresh and vibrant. Like hand full of blackcurrant and raspberry crushed right there. Underneath, there is a such gorgeous floral aroma stickling, fresh rose, peony, lavender. Deep within there is a hint of cedar and sweet coco hiding. Magical drop. Fruits is still celebrating the youth yet, very settled and matured way. There is just right amount of red ripe strawberry and dark ripe cherry coexisting with lift of mandarin zest and layers of spices, vanilla, coco nibs, cinnamon, cardamom, cedar, cigar powder... all the elements are so perfectly sitting where they should be. It is smooth and comforting. The tannins are soft and wrap the palate nicely.
7 years of patience has definitely paid off. Developed into such refined zen wine. It is drinking beautifully now or another 3years may perform completely different magic .

Sauvignon Blanc

Lemon clear appearance. Enchanting sappy honey lemon nose opening the sensory journey. In the background, there are fresh picked summer herbs supporting the structure - thyme, chervil, Italian parsley. Pretty floral aroma pops up in the glass: honeysuckle, camomile mint tea. Sweet hint of lollied red apple makes the wine very appealing.

The texture is touch creamy balanced with zesty acidity. Straight away, fresh flavour of gooseberry and kumquat dance on the palate then little tickle of botanical like Frangipani and lemon blossom character flows in. Generous spices shape up the drop : there is nutmeg, wattle seed, hint of vanilla.

Skilled use of oak shining in the wine. Drinks well now but might be interesting to see how the oak and acidity develop over few years.

Chardonnay 2022

Chardonnay 100%

Light straw pale with lemony gold shine. The aroma has ripe fruit forward expression with fresh yellow nectarines with drizzle of lemon myrtle honey and freshly cut pineapple. There is a delicate hint of parsley field breeze at the background.
The palate is delightful. Layers of lemon, coconut fresh and dried pineapple with cinnamon dust. Touch of mango like generous fruit character. Amazing length. Good spices exist on the palate - Vanilla pot, cumin, dried mint. Great influence from oak work too with a pinch of toasted pine nut flavour and a caramel apple pie. There is a bit of bitter bite liken to mandarine pith and yuzu zest. Bright zesty acidity

perfectly balanced with all the other flavours.
This exhibit so much potential of good Chardonnay from three Burgundy Clones. Drinking amazing now also showcases its cellaring longevity.

"What a beauty! Six from the second it hit the bat. It's succulent and fresh, rich and cool. Kaleidoscopic in fruit, spice, sweet elements, very savoury notes with detail in saline minerality, toasty seasoning all with gentle, supple flow and a very long finish. The honeycomb, truffle and preserved lemon notes are superb. Key lime pie, green apple and gentle grapefruit inflections are more in the conversation. A stunner – so complex, so good to drink."-Mike Bennie

Chardonnay 2023

Chardonnay 100%

Pale lemon. The aroma super ripe white nectarine, and apricot and freshly cut pineapple with touch of toasted macadamia nut. The palate is full and generous. Mouth coating satisfying sensation driven with waves of flavours- fresh pear, apricot, pineapple, mango water and mandarin pith. Spiced up with tickling gingery character and gunpowder flinty minerals. Although charged with so much power it dances rather delicately on the palate.

Drinking well now but there is plenty of zesty ‘lime-ness’ and enough phenolic in wine it will take this wine to a long journey ahead. I would love to see in 5 years and 8 years, if I can 10 years of further development.

Vermentino 2021

Vermentino

This wine is very, very exciting. Our very first Vermentino. Some of the grapes are sun-kissed honey ripe and some portions of them could have been a bit riper. This mixture of ripening levels played a crucial part in the final product.

The colour is very pale and delicate, soft, natural hay tone. The aroma is elegant and dainty. Pretty floral perfume touches on the nose, daffodils, honey suckle and water lily, finishing with a gentle whiff of flint.

The palate also seems a little timid at start but gradually it offers you out bit of this and bit of that. Lively limey acidity combined with Granny Smith like crunchy acidity. Juicy yellow grapefruit segment burst in the mid-palate then the super varietal almond milky flavour and texture wraps up the finish.  Such a contrast to the powerful red bakkheia offers but it is definitely having its own place in the repertoire.

Vermentino 2023

Vermentino

Pale straw-coloured wine. On the third attempt the wine is close to the mark.  Some good swirls to breathe and reveal quite complex nose. Obvious citrus presence presiding over the glass, lemon zest, bergamot somehow a touch of sweetness like crystallised lemon peel. Then a lifting floral scent revealing fresh spring rose, orange blossom and blooming frangipani. A subtle herbaceous spectrum at the back nose, soft chervil and fennel leaf. So fresh. Zappy and crunchy acid is the first impression. Ripe fruits characters on the palate, something water-rich and juicy like starfruit and Nashi pear. Savory with a hint of saline characters make the palate nice and long. The varietal phenolic texture came out better this year, lingering in the mouth.  Great food wine. Enjoy with oysters followed by roasted trout with herbs and citrus. We are pleased with the progress of the Vermentino and will continue pursuing the magic.

Rose

Cabernet Sauvignon

The colour strawberry rose water and visually very unlike our usual Rose. However, generous as always. Like popping candy, the aroma pops in the mouth with peach, strawberry, cherry, raspberry, pomegranate, rose petals, hibiscus…All the pretty pink stuff. There is a focused structural element running through the backbone beneath all the playfulness. Varietal tickling spices beautifully kissed by joyous fruits. Perfect drink for summertime celebrations, cheeky weeknight treats, fun night with your friends to lift your spirits.

Cojones Muy Grandes 2025

Grenache / Mourvèdre Blend

Super pale onion skin. Just like a good French Provincial style Rosé.

The aroma is very pretty and musical. Freshly crushed white peach, lychee, rose water, cherry blossom. Fun and super inviting.

You never expect this expressive flavours from the appearance. It’s definitely melts in your mouth and punch in your gut.  A massive flavour bomb, just like biting into super ripe luscious peach, it also tastes like fresh strawberry and chanterelle cream, lemon curd tart with candied red delicious skin sprinkled on the top. The mouthwatering palate also reminds me of all the succulent Asian fruits,  logan, mangosteen and lychee. It’s also has fresh mandarin like lifted acidity and pomelo pith like a touch of the edgy character. Incredible moreish texture. You have your sunny day on your balcony sorted. Or a picnic on the beach and also your bbq party and drink after a long day at work.

Just in case, if anyone is wondering. There is no residual sugar. All purely come from intensity of pure fruitiness.
